Tomato, Corn, and Avocado Salad with Tortilla Chips

This Mexican style salad is a pure goodness of flavor and crunch!
Amazing with BBQ or grilled chicken, this healthy and delicious salad is loaded with flavor and texture – juicy tomatoes, creamy avocado, refreshing cucumbers, flavorful corn, and spicy onions, topped with crunchy tortilla chips! And don’t forget a freshly squeezed lime juice with cilantro – it’s a great light dressing for this fresh and easy to make salad. 
This Mexican style salad is great as an appetizer or as a side dish for meat and poultry. You can improvise with it by adding bell peppers, romaine lettuce, and black beans. 

Ingredients

Salad:
1 cups corn kernels: canned, cooked or frozen (thawed)
1 avocados, cut into 1/2-inch cubes
2 medium tomatoes, cut into 1/2-inch cubes 
1 small finely diced red onion
1/2 English or 2 Mini Cucumbers, peeled and cut into 1/2-inch cubes
1 cup coarsely broken tortilla chips (I use Tostitos - Restaurant Style Tortilla chips)

Dressing:
1/4 cup extra virgin olive oil
1/2 teaspoon grated lime zest
fresh  juice from 2 limes or a lemon
1/4 cup chopped cilantro or parsley
salt, pepper to taste

Directions:

Mexican Salad with Tortilla Chips

I am not a fan of cilantro and generally prefer lemon over lime. If you are like me, use  parsley and lemon in this salad, otherwise you can use cilantro and lime for more authentic Mexican Style Salad.

Place all salad ingredients in a large bowl. 
In separate bowl, mix dressing ingredients. Drizzle the salad with a dressing and toss together.
