My Favorite Vegetable Soup

Last month we moved to Toronto from Montreal. 541 km and 6 hours later, we are in a new home. It’s hard to call this house a “home” right away and despite getting used to being here, even after a month it is still feels like cheating. I loved our home in Montreal where we lived for 9 years. There are so many memories: kids went to school- they were only 4 and 7 at the time we moved in, our Christmas tree decorating tradition, and celebrations, and sleepovers with friends, and BBQs in our perfect backyard we were so proud of, and so much more…So, yes, its hard right away to call the other house a “home”, it just doesn’t feel right, but we are all together and this is what important, because the home is where my family is.
Anyway, this week my mom came from Montreal to visit us. The weather was absolutely brilliant, but with the beginning of October, the leaves are all of a sudden colored red, yellow, and orange. And yes, it’s beautiful, but I know just what’s coming after all this beauty is gone…Winter! Our very cold, very long Canadian winter. And people ask me, is it warmer in Toronto? “I don’t know”, I say, “I don’t think so”, because, truly, even if it is 2 degrees warmer, who cares? It is still not the Caribbeans. And today, we woke up to +5 C. A bit cruel, don’t you think? Wait! We are not ready! (but then, we will never will be) smiley
So, we went out with my Mom to run some errands, to do some shopping, and most importantly – to spend time together! As wives, mothers, we take care of everybody in our family, but only with our Moms we can relax and let her take care of us, and spoil us with our favorite childhood dishes. Suddenly, I wanted us to cook together all the things I LOVE, all the things I almost never cook myself. And what can be better and more comforting in this cold weather than a bowl of your favorite steaming soup? So, my Mom cooked, and I wrote the recipe down and took the pictures. So, here, let me present you, my Favourite Vegetable Soup! TA DA!!!

Ingredients

1 big white potato
1 big carrot
1 onion
1 ½-2 cup Frozen peas
400 g (about 5 cups) white cabbage, shredded 
2-3 tbsp.dill, chopped
Salt to taste

Directions

Place 2 liters of water and 2 teaspoons of salt into a large 5 L pan. Place the pan over a high heat and bring to the boil. 
Peel and cut the potato to ½” chunks. Peel and finely chop the onion. Grate the carrot on a medium grater.

Cut the vegetables for the soup
When the water is boiling add onion, potato and peas. Lower the heat and cover the pot.
When the potato and peas are cooked, add the carrot and cabbage. Note: You can always increase the amount of cabbage by about 100g if you want the soup to be thicker.

Shred the cabbage for the soup
Add hot water to come up to about 4 cm from the top. Let the soup simmer over the medium heat.
When the water is boiling, add the dill.

Soup with Vegetables

Continue cooking for another 2-3 minutes. Don’t overcook, you don’t want the cabbage to be too soft. I prefer when it’s a bit crunchy. 
Remove from the heat and serve hot. Garnish with a spoon of sour cream.
