Very light, healthy and filling salad. All the goodness of vegetables and the presentation is so colorful and pretty just like the Mimosa flowers.

Ingredients

1can tuna in water

5 hardboiled eggs, peeled

2 small onions, diced

4 medium potatoes

4 medium carrots

1 cup mayonnaise

Fresh parsley

1 apple

Salt, pepper to taste

Directions

Separate egg whites from the yolks into 2 different container. Shred the egg whites on medium grater.

To eliminate any bitterness in white onions, scald the diced onions with hot water. Place the onions in a colander and quickly pour boiling water over them. Scalding process should not last more than a minute and half.

Boil the potatoes in their skins, cool, peel and grate on medium grater. Season with salt and pepper.

Boil the carrots in their skin, cool, peel and grate. Season with salt and pepper.

Mash canned tuna with a fork.

Peel an apple and shred on a medium grater.

Top with finely grated yolks.

Before serving, garnish with fresh parsley or dill.

Arrange the salad in layers in the following order, sprinkling each layer with a bit of mayonnaise:

1st layer: apples

2nd layer: tuna

3rd layer: Potatoes

4th layer: Onions

5th layer: carrots

6th layer: egg whites

8th layer: yolk
