Delicious Double Chocolate Cheesecake with Oreo Crust

Hey chocolate lovers - this Chocolate Cheesecake recipe is for you! Made with Oreo chocolate cookie crumb crust, creamy cheese and delicious rich chocolate - this Cake is a guaranteed success. For special occasions decorate the cake with Chocolate shavings or curls and raspberries. Chocolate and Raspberries... heavenly combination.

I made this Cake for my son's 16th Birthday this year. He Loved it. Happy Birthday, Honey!

Ingredients

22 Oreo Cookies (300 gr.) 
2.5 Tbsp. butter, melted
3 pkg. (250 g each) Philadelphia Brick Cream Cheese, softened
3/4 cup sugar
1 tsp. vanilla
1 pkg. (225 g) Baker's Semi-Sweet Chocolate
3 eggs
6 oz container of raspberries (optional)
Dark Chocolate block or 1/2 cup semi-sweet chocolate chips (optional)

Directions

Heat oven to 325°F. 
Place Oreo cookies on a cutting board, cover with plastic wrap and pound with a rolling pin or meat mallet until crushed. You can break them with hands, but it will take longer.

In a bowl, combine the crushed cookies with butter and press onto bottom of 9-inch spring form pan.

Beat cream cheese, sugar and vanilla with mixer until well blended. Note: it is very important to bring the cheese to a room temperature and use it when softened. The first time I made the cake, I ignored this step and used cheese straight from a fridge. What happened is the cheese didn’t incorporate smoothly with chocolate, leaving small white pieces of cheese. 
Melt the chocolate and let it cool slightly. Add chocolate to the cheese and mix well.
Add eggs, one at a time, mixing on low speed just until blended. 
Pour over crust.
Bake for about 45 minutes or until centre is almost set. 
Run knife around rim of pan to loosen cake.  Cool completely before removing rim. Refrigerate for at least 4 hours.

Delicious Chocolate Birthday Cheesecake for Someone Special

To make the curls:

Chill the 50%-70% cacao chocolate slab for a couple of hours in refrigerator before shaving. The room temperature chocolate won’t create nice sharp curls or shavings.
Hold the chocolate bar in a piece of paper towel to prevent it from melting in your hand and carefully, using the vegetable’ peeler, shave along the length of the bar to form pretty chocolate curls.
For more dramatic curls - press the peeler deeper into the chocolate, for more delicate and small curls – draw it gently across the edge.
You can also use the homemade block of chocolate made from ½ cup melted semi-sweet chocolate chips with 2 tbs. odorless cooking oil. Refrigerate the chocolate for a couple of hours for best results.
