Ingredients

1 cup self raising flour for baking *
1/2 cup unsalted butter, room temperature
2/3 cup sugar
2 large eggs
1 tsp vanilla extract
3 tblsp milk
3 Granny Smith apples
1/2 tsp cinnamon

* you can substitute self raising flour for 1 cup all-purpose flour+1 tsp baking powder+1/4 tsp salt


Directions

Preheat the oven to 350°F. Grease 9-inch springform.
Cream butter and white sugar with an electric mixer until light and fluffy for about 3 minutes. In the meantime wash, peel, cored and cut apples into small cubes.
Add eggs, one at a time, beating well and scraping down the sides of the bowl after each addition.
Add vanilla and milk. The butter at this point will look grainy. Don't worry about that, it's normal. I also want to mention that once I didn't took the butter out from the fridge in advance and needed to melt it in a microwave before beating it with the sugar. The cake still was perfect although in this case you will see that the mixture is not grainy,
Add flour and mix on low speed until just combined. I like to pass the flour through a flour sifter. If you don't have a sifter you can use a fine mesh strainer. It will make the cake more delicate and airy.
7.Fold in the apples and cinnamon.
8.Transfer batter into the prepared pan and even the top. Sprinkle evenly with 1 tablespoon of sugar.It will give a cake nice golden color.
9.Bake for about 35-40 minutes, or until the cake is golden and a toothpick inserted into the center comes out clean. 
You can dust the cake with icing sugar, but it's not necessary. It looks nicer but doesn't affect the taste.
