Crustless Cheese Quiche with dried fruits - light, flavorful and very easy to make

I love this Delicate Crustless Cheese Quiche made with your favorite dried fruits. It's healthy, very easy to make, versatile and delicious! I always have all the ingredients in my kitchen and when decide to make it, need to buy only the cheese. It's great for breakfast with coffee or for an afternoon tea, or just as a snack. We eat this Cheese Quiche in the evening as well on the day you don't want a heavy dinner - before an evening sport practice or the day you had  a big lunch. It's great cold or warm, with honey, jam or on its own. This flavorful Cheese Quiche will surprise and delight both you and your entire family.

Ingredients

750 gr low fat cottage cheese or Quark (I usually use Western Creamery Pressed Cottage Cheese 0.5% or 5% cottage cheese that sold in European delis. The finer the cottage cheese’ grains, the better)
3 eggs
3 tbsp. sugar
1 tsp. vanilla extract
3 tbsp. flour
1/3 cup raisins
1/3 cup dry cranberries
6 dried apricots, chopped
A bit of vegetable oil for pan greasing
2-3 tbsp. low fat sour cream

Directions

Preheat stove to 400 ºF.
The dried fruits I like to use are raisins, apricots, cherries, and cranberries, but you can use a cup of any mixed dried fruits you like or have on hand. 
In a small bowl pour boiling water and place the dried fruits to soak for about 20 minutes.

Crustless Cheese Casserole

In a bowl, mix with the spoon the first four ingredients until completely blended.

Dry 5% cottage for Cheese Quiche

If the mixture is too stiff and hard to mix, add 1tbsp. sour cream. The mixture should be mixable but not liquidly.
Drain the dried fruits and add them to a cheese mixture. Mix well.

Crustless Cheese Quiche

Optionally, cheese casserole can be given a light touch of lemon. You can add a teaspoon of lemon zest and squeeze a bit of lemon juice to the mixture.
Grease 9*13 pan with a bit of oil, transfer the cheese mixture to the pan and smooth.
Cover the cheese mixture surface with a thin layer of sour cream and bake for 40-45 minutes or until nice golden brown.

Crustless Cheese Quiche

The casserole can be served at room temperature or chilled. Serve on its own or with sour cream, jam or honey.
