Bean Soup with Vegetables

Yesterday we had a first snow. Even for Canada is a bit early. The weather is throwing fits and changing every day. Just a week ago we had a couple of fabulous summer days with 25C, and 6 days later 1C and snow. Summer for me never comes too soon, where is the winter …well, it’s a completely different story. So what can you do during these long dark cold winter nights? Right, cook and eat :) Not only that, I mean, you can also watch your favorite shows on TV, but not to forget the comfort of food :) So, when it became cold yesterday, I decided to make one of my favorite soups – Bean Soup with Vegetables.  This comforting soup with beans and hearty vegetables is simply delicious. It is very easy and fast to make, healthy and very tasty. I am finishing to write this recipe and going to enjoy the steaming bowl of my delicious Bean Soup with Vegetables. Ingredients

1 can beans 
2 1/2 cups water
1 medium potato, peeled and cut
1 medium onion, chopped
1 medium carrot, grated
1 Bell pepper or 2 halves of different color, finely chopped
1 tbsp. tomato paste
Parsley, chopped
Salt, pepper to taste

Directions

I used Romano beans but you can use any other type of beans you have. You can also can use fresh / raw beans. They need to be soaked overnight before use.
Fill the pot with water, add potatoes and cook it over a medium heat. 
In the meantime, in a skillet, over a low heat, fry onion until light golden. Add the carrot and continue sauté for another 2-3 minutes. 
Rinse and drain the beans. 
When the potato is ready, add onion, carrot, bell pepper, beans and the tomato paste.
Bring the soup to a boil, add salt, pepper, parsley and simmer for another 10 minutes.
Remove from the heat and let it stand covered for at least 30 min. to absorb the flavors.
