Apple Pineapple Salad with Pecans, Kohlrabi and Raisins

This light and fruity salad can be served as an appetizer or a side dish for poultry. Great for breakfast, brunch, snack or lunch. Apple Pineapple Salad with Kohlrabi, Pecans and Raisins is easily prepared, healthy, full of flavor and texture. I make this salad with Kohlrabi. Kohlrabi is a beautiful vegetable from cabbage family with a taste and texture somewhere between cabbage and green apple. If you’ve never had Kohlrabi, you should definitely give it a try next time you come across it.

Ingredients

1/2 cup walnuts or pecans, chopped
2 tablespoons light mayonnaise
1 tbsp. sugar
3 large green apples, like Granny Smith
1 kohlrabi
3/4 cup raisins
1 cup pineapple chunks

Directions

Fruit Salad with Apples, Pineapples, Pecans and Kohlrabi

Peel, halve, core, and dice the apples into small, bite-size cubes.
Place the raisins in the very hot or boiled water and soak for about 10 minutes. Squeeze the water and add raisins to the bowl with apples.
Cut the pineapple’s chunks into smaller bite-size pieces and add to the salad.

Pineapple Apple Salad with Pecans and Kohlrabi

Peel and grate the kohlrabi and add it to the salad. 
Toss walnuts or pecans into the salad. 
Add sugar and stir in the mayonnaise. Mix well.
You can serve the salad right away but it’s even better after being refrigerated for a couple of hours.
