Stir-Fried Pork with Noodles and Vegetables

This fabulous Pork Tenderloin & Noodles Stir Fry with Veggies comes together quickly and with a minimal effort. You can chop veggies in advance and store it in a plastic bag or container in a fridge. When you ready to cook, it will take less than half an hour to make an amazing dinner. This fast and tasty dish is awesome for busy weeknights and lunch boxes.
If you crave something flavorful with a kick of heat, healthy and colorful this one-pot dish is for you! The great thing about this dish is that you can improvise with the veggies, using broccoli, bell peppers, baby corn, and mushrooms. You can also prepare only meat with veggies (skipping the noodles) and add them on top of cooked rice or rice noodles. The possibilities of this fantastic dish are endless. If you don’t have sesame oil, use the vegetable one, but let me tell you that making this dish with both, I am not going back to the vegetable oil. The combination of sesame oil and ginger, the aroma and the flavor….yum! Once tried, you will never want to cook a stir-fry without these two.
My son loves Chinese food and this dish is one of his favorites. I’ve been working on perfecting it and we really love the result. 

Ingredients

700 gr. Pork fillets, trimmed and cut into 1/2-inch-wide strips or cubes
200 gr. Instant noodles
1 ½ inch piece of ginger root, peeled and grated
2 garlic cloves, finely chopped or squeezed
1/2 tsp. red pepper flakes
3 tbsp. sesame oil
2-3 tbsp. soya sauce
3 tbsp. teriyaki sauce
12 baby corn, cut in half
2 cups broccoli florets
Salt, pepper to taste
2 Scallions, chopped

Directions

/Stir-Fried Pork with Vegetables and Noodles

Bring a pan of salted water to a boil and cook noodles following pack instructions. Drain and set aside.

Pork fillet

Heat 2 tsp. sesame oil in large skillet or wok, over medium-high heat. Add garlic, half of scallions, ginger and red pepper flakes and sauté for a couple of minutes. 

Fry the spices

Add pork and stir fry until browned, about 5 minutes. Add 2 tbsp. soya and teriyaki sauces, salt, pepper and stir well.  
Reduce the heat to low and cover the skillet. Let the meat to slowly cook for about 10 minutes, become tender and absorb the flavors of spices and sauces. 
Remove the cover and add the remaining sesame oil, soya and teriyaki sauces, baby corn and broccoli. Fry uncovered on medium heat, stirring occasionally, until the broccoli is crisp-tender, about 3-4 minutes. 

Fry pork with vegetables

Add noodles to the skillet and stir to heat through and combine with meat and vegetables. Add more teriyaki and soya sauce if desired. 
Remove from the heat and serve hot, topping with the remaining scallions.

Spicy Fried Pork with baby corn and broccoli
