Pork Tenderloin with Apples

I love apples almost as much as I love chocolate, no, let me retrace, I love COOKING with apples almost as much as I love make chocolate dishes. I mean, if there are desserts with apples on the menu, like apple strudel or apple crunch, I will have a hard time deciding between a chocolate dessert and an apple one, but if the appetizer or main dish has apples, I will choose it without even reading the rest of the ingredients. There are foods that just can’t make the dish bad, for me its cheese, apples, and nuts :)
Anyway, this week, I bought a beautiful pork tenderloin and apples – just for fun I bought 3 or 4 different kinds and decided to make Pork Tenderloin with Apples. The recipe is great! So fast, so easy and so tasty! Sweet colorful apples, juicy pork and caramelized onions …yum! Served with rice and we had a delicious, full of punchy flavors Sunday lunch!

Ingredients

1 Pork Tenderloin, about 450 g
2 apples
1 medium onion, sliced
1 cup Chicken or Vegetable broth
1 bay leaf
1 tbsp. mustard powder
1 tbsp. flour
Parsley for garnishing (optional)
Salt, pepper to taste
Olive oil for frying

Directions

In a medium bowl, mix together flour and salt. 
Peel and slice thinly the onion.  
Core the apples and slice into wedges.
Cut the pork to ¾” pieces and place in the bowl with flour. Cover the meat completely with flour from all the sides.

Sear the pork tenderlion
In a frying pan, heat the oil. The pork tenderloin doesn’t have much fat so to get a juicy meat we would want to sear it first. To do this, we fry it from all the sides over the high heat until it’s a beautiful golden brown. This adds a color, flavor and keeps juices inside the meat. Remove the pork from the pan.

Fry the sliced onions
Add the onions to the frying pan and fry until soft and golden. 
Add the apples and cook until lightly caramelized.

Caramelize the apples

Add the broth and cook for about a minute, stirring occasionally. 
Add the meat back to the pan. Add also the bay leaf, salt, pepper and the mustard powder. Let the broth to boil, lower the heat and continue cooking for another 10-15 minutes, stirring frequently.

Pork tenderloin with apples
Garnish with chopped parsley and serve with rice.
