Beet Salad with Garlic and Prunes

We love this tasty Beet Salad made with garlic, lemon and just a bit of mayonnaise. You can make it with prunes or without, either way it’s delicious. Try and let me know which one you like the best. Will you? This authentic Russian salad has been very popular in our family forever. It’s easy and fast to make, piquant, creamy and very versatile. You can serve it as an appetizer, a side dish or a spread on the bread. 

Ingredients

7 medium beets
Juice from ½ lemon
2 tbsp. mayonnaise
2-3 garlic cloves, squeezed
7-8 medium prunes (optional)
Salt to taste

Directions

Beet Salad with Garlic and Prunes

Soak the prunes in cold water for about 2 hours prior to using. Chop the prunes. I didn't add the prunes this time, just because I run out of them and forgot to buy, but this salad is great even without the prunes. 
Place the beets into a pot and fill with enough water just to cover. Bring to a boil over the high heat. Lower the heat and simmer over medium heat until tender enough to pierce with a knife, about 20 minutes. 
Drain, cool and peel the skin. To cool it faster, place the beets under the cold running water.
Grate the beets on the side with small holes. Place in a bowl. Add garlic, mayonnaise, and prunes.
Mix together and salt to taste.
