Beet Salad with Chicken, Prunes, Garlic and Pecans

Beet is a colorful and a very healthy vegetable root, rich in valuable Nutrients. Beets are so easy to prepare and extremely versatile. It can be used in Soups – don’t forget the delicious Borsch, and in a variety of salads. This particular Beet Salad made with chicken and is a great lunch option. It can be also prepared as a vegetarian dish and served as a side dish or a light tasty Salad. The variety of ingredients create the bouquet of flavors and textures: Garlicky, creamy Salad, with crunchy nuts and sweet prunes. Enjoy this authentic Russian recipe!

Ingredients

450 g Beets
100 g Chicken fillet, cooked
3 cloves garlic, squeezed
½ cup Walnuts or Pecans, chopped
2-3 tbsp. Mayonnaise 
150 g Prunes, chopped

Directions

Wash and scrub the beets. Cook or bake them in the oven covered with foil, until ready. The baking will take much longer than the boiling. To check if the beets are cooked, pierce the beet with the paring knife, it should slide right through. 
Drain the water, carefully take out the beets with the fork or a serving spoon and place on the plate to cool. When the beets are completely cooled and safe to handle, peel the skin. 
Cut the beets into small, about ½” size cubes.Cut the beets
Cut the cooked chicken into small pieces too. 
Finely chop or squeeze the garlic. This one is optional. If you don’t like the garlic, you can make the salad without it.
Chop the nuts and prunes. I used Pecans because I love them and always have it on hand, but walnuts will work great as well. Chop the cooked chicken, nuts and prunes
Place all the ingredients into a bowl and add mayonnaise. Mix well and add salt to taste if needed.
Store in a refrigerator and serve the salad cold.
